Crock, Stock and Barrel
A well-stocked cellar and attic means the family will survive
the winter comfortably. In order to accomplish this, as fall draws to a
close, final harvest of late vegetables must be done, and the last of the
food preserving for the growing season must be undertaken. Slicing cabbage
and packing it tightly into crocks to ferment into sauerkraut is a German
custom that carried right on over to America. Making apple cider by grinding
apples and pressing them in a cider press is another old custom often
associated with the English but brought over to America. Foods are preserved
in a variety of ways: with salt, sugar, vinegar, by drying, or by storing
them in a cool cellar for winter. With most of the field crops already
harvested, other activities such as threshing grain or processing flax can
be done at this time.
